This is a classic Italian Caprese salad, and it's super easy. It's filled with just the right amounts of basil, tomatoes, and mozzarella. I took this recipe to a party recently, and my friends had a blast making it. Everyone said this is the best salad they've ever had. It is so simple. You'll Need: 1 pound of fresh tomatoes (I used Romas but you can also use plum or beefsteak tomatoes) 1/2 cup of freshly chopped basil 1/4 cup of extra virgin olive oil 8 slices of mozzarella cheese crackers or bread (optional) Chop the tomatoes. You want them about 1/4 inch thick so they cook at the same rate as the cheese. Just place them in a bowl. Chop the basil. Be sure to get rid of the leaves that are too big. Gently add the olive oil and basil to the tomatoes and let sit for about 15 minutes. Then, chop the mozzarella into small pieces. I like to use a vegetable peeler to get nice chunks of cheese. Stir together the mozzarella, basil, and tomatoes.
